I don't claim to be able to cook or be Italian, but I do claim to make really tasty ravioli.

It all starts with too many tiny pieces of mushroom.

(That's a whole pound/454 grams of mushrooms, by the way).

And then roll out the pasta dough and cut it and make it ravioli.

It takes forever but tastes delicious, so figure out your priorities before attempting.

Looks delicious. What besides mushrooms are in there?

The filing is mushrooms, rosemary, balsamic vinegar, butter, ricotta, and salt and pepper. I served them in a sauce made of butter, chicken broth, white wine, rosemary, garlic, and some leftover mushroom juices from preparing the filing.
