To all my Turkish friends (all others as well) let me tell you something:

THIS IS A PIZZA !!!

Not made by me and as you can see, I couldn’t wait to try it. It is from the Pizza God in Zürich “Don Leon”. In my opinion the best I know and I know many. Just in case, he has also other great Italian food and wine. This one is “Ai tre Gusti” with ham, mushroom and spicy salami.

Turkey has Pide and Lahmacun, yes it’s Pizza alike but a different thing. Most restaurants believe because they serve an excellent Pide they also can make Pizza. But sorry it’s not that easy. First of all the dough. A Pide dough is not necessarily the perfect Pizza dough, however it can be used for Pizza. I use it as well for Pizza but just because I’m to lazy to do it myself. So I buy it from the Restaurant and put it 2-3 days into the fridge to grow. A good Pizza dough should rest at least 2 days before used. Keep in mind, every good Pizzeria has a secret family recipe for the dough which makes the difference 😉.

Second, the Pizza oven. For a good Pizza, you need at least 280-300• temperature. It should not last more than 5-6 minutes to bake it with a crispy dough and melted cheese without burning it. Now this is tricky at home because the normal oven don’t reach this temperature. For that reason I use a special mini Pizza oven with a shamott firebrick inside, heating up to 300 in very short time. I can not make it that big like on the picture, but the result is really good. Now the restaurant usually have a professional oven, some have wooden fire but sorry, I’m still searching for a good Pizza (ofc they are eatable but with good I mean Good Good +).

Last, let’s talk about cheese. It’s basic, a standard Pizza is made with Mozarella! I know you can use Kasar and it’s melting too but, It’s Not The Same. It’s to oily and more like a cheese soup on top of the dough. I know that Mozarella costs more but you can get it. Don’t save at the quality if you like to have it great. The Restaurants; sad very sad, most of them still believe Pizza is a round Pide.

Totally agree with all that you have said, there is a great *BUT*, however, I am not gonna get into it ☺️

I guess I understand that BUT, but I’m kind of a food freak. Just sad the Restaurants can’t try a little bit harder.

Mich Millner (puhn), well, yeah Restaurants can’t make an ideal pizza that’s why I don’t eat pizza at restaurants and if I want to eat pizza then make it at home. No difference and cheaper 😂

I know Kurdish/Turkish guys in the Kanton Aargau I really could reccomend for good pizzas too. And an Italian guy in Winterthur. Since I meet them the first time I don't like other pizzas anymore.

Not only, Pide is very traditional too but as mentioned, the Restaurant don’t really try hard to make a “real” Pizza
