Note, this is not a recipe for making a smoked or cured salami that can remain unrefrigerated. This is a simple cooked sausage recipe that allows you to make your own salami sausage in a little over a day, without any special tools or equipment. While we want to get into curing and smoking our own meat, this process here allows us to get started on crafting meat while we work on setting up our smoke house.

We've modified it a bit, but here's the ingredient list and instructions. We can't wait to build a smokehouse, but for now, this will have to hold us over. Enjoy!

INGREDIENTS * 3# Ground Meat (Beef) * 3 Tbsp Mustard Seed * 2 Tbsp Curing Salt * 2 Tbsp Liquid Smoke * 1 Tbsp Garlic Powder * 1 Tbsp Black Pepper * 1 tspn Celery Seed * 1 tspn Smoked Paprika * 1 Cayenne Pepper (Ground) * 3/4 cup Water

DIRECTIONS Mix all ingredients together in a bowl and then thoroughly work into the ground meat. Once all ingredients are worked into the meat, shape into three cylinders and wrap in aluminum foil. Refrigerate for 24 hours. After 24 hours, open the foil and cook at 300 degrees for one hour. Then drain out any liquid and reduce heat to 250 degrees for another half hour. Cool and serve. Refrigerate any leftovers.

Again, this is just a quick and easy way to make a salami with a great taste in just over a day. We are still working on our method and ingredients, but it's so nice to be able to control what goes into the sausage. Give it a try and see what you think.
